Recipe for Sour Cream (not personally tried it)
1 cup cream 1 1/2 cup pasteurized whole milk 1/2 cup buttermilk
Mix together in bowl, sitting over pan of warm water. Heat to 68-70*F (about 20*C). Let stand 12-24 hours, until sufficiently sour and thick enough to stick to spoon. Refrigerate.

I love walking through the markets here past the open bags of spices. The rich colours, the throat catching smell. Just magic.
See them dry and then grind the spices is good in villages as well.
this place is great for spices and Xi'an in particular because it has the Xinjiang spices as well as the Sichuan and southern spices.

Amonk, I have never seen buttermilk here, and cream is hard to come by. But I have an idea. There is a sour milk here, not sure if it is the same bacteria as for sour cream, but will try to investigate.

Buttermilk? Mix 1 Tablespoon lemon juice or white vinegar into 1 cup milk...let sit 5-10 minutes Have fun

I have yet to see evaporated milk in China! In my opinion it's better than condensed milk for everyday living. I still have a condensed milk "jag" occasionally.....I like the tubes!! Didja ever do that as a kid? Spend your pocket money on a tube of condensed milk and suck the life out of it?

We didn't get tubes when I was a kid. We only got canned, but I loved it, and the caramel tarts made with the cooked stuff.
Funny, tubes are a later invention, I thought, and I thought I was younger than George. I guess that childhood ends earlier in some than others.
I also remember seeing evaporated milk somewhere in China I have been quite a long time ago, but can't recall where. Don't think it was down here. If it had been down here, I would probably have some. Poo, it must have been before I moved here, on one of my (several previous) trips here . . . . . maybe it was HK, or somewhere in Guangdong. I like evap too. I can make powdered work for most stuff, though, if I have to. I have made yoghurt on powdered milk, and I have seen mum use powdered and tinned milk to whip into cream.
