Can anyone tell me if I bring over my (unlocked) mobile phone, will I be able to get a pre paid/starter kit, or would I be better off just buying a new phone once I'm over there? Cheers

OZ and China use similar GSM frequencies so you should be fine. The one drawback is that most phones sold outside of China do not support Chinese characters so you won't be able to use them. I'd say bring it along as a beginning solutions and see how it goes. If you find yourself needing Chinese characters, just get another one locally.
but as far as just getting a SIM card and number, no problem

Bring your phone, buy a Chinese SIM card. I do this in reverse, and also have a couple of spare SIM cards here to give visitors to put in theirs. Dead easy. All you have to do then is make certain it covers all of China - easy and no extra cost at time of purchase of card, and fill it up with money. The Chinese SIM cards supports both Chinese and English.
