Just wondering if I should bring along original documents when I come over (Diplomas, certificates, references etc), or if certified copies would be the way to go?

Copies are fine. References probably aren't worth bringing. Have backup copies, including your passport front page, and keep the two sets in different places. You won't sign a contract until you're seated in the Foreign Affairs office of your school. There will be two: one in English, one Chinese. They'll both get the official stamp. Copies sent by fax/email are for your information and as statements of commitment from both parties, but they're not legal documents.

Don't just bring a couple of xeroxes. Scan the docs, put a copy on CD, and stash another online in a Yahoo briefcase or as an attached message to a gmail account. That way you're covered even if all the paper copies are lost/destroyed.

I scanned and emailed all of my docs before I came here, plus paper copied them and brought the originals with me - didn't want them in storage in Oz in case I need them for other jobs.

Yup. Copies won't fly here unless they are OFFICIAL copies. They have to be notarized or, even better, bearing the official seal of the university etc. that issued them.
If you don't bring originals, be sure and leave the originals with someone at home who can find them and zap them to you in a pinch!

Schools have insisted on a bonafide diploma from me. The rub: try getting a replacement!
Bring the originals. But be EXTREMELY careful with them, and find out the procedure for getting replacements should your dog eat the current ones.
